So the ideas is to give you an opportunity of trying something that works with olive oil as the main cooking liquid. As many people know Mediterranean countries produce olive oil from Spain being the biggest with Italy Greece and Turkiye following .
Every country has their magic recipe . Today I’m going to give you one that is enjoyed in Turkiye .
The idea is you cook your veggies in olive oil slowly with little water . Today I cooked leeks carrots onions and celeriac in the pot.
First I cut up all my veggies .
Then placed them in a pot with olive oil about 1/2 cup
Added 1 teaspoon salt 1.5 teaspoons of sugar mixed it up let it slowly heat up .once I could see the mixture getting going a little sizzle I added about 1/2 cup water to the top of veggies.
I let it cook slowly braising away. Once fully cooked soft I removed it from heat and let it cool.
I like to eat mine cold with fresh bread simple and easy. In this recipe there is usually a handful of rice added to cook at end but I opted out this time.
